I'm level 97 High Commander my stats are:

    Energy: 175
    Stamina: 131
    Attack:150
    Defense:150
    Health: 125

How am I doing thus far? I'm a balanced player so I aim to do everything I possibly can. I'm currently boosting ATK and DEF and am nearly done with Azeron's blessings. Which demi should I go to next and how am i doing up to this point?

Is that health from praying to Aurora or did you put points in it? Health is currently a useless stat and praying to Aurora (for the 40/40 amulet) is already enough of an increase. Your attack and defense are low for your level if you want to pvp, but for a balanced build it's ok I guess. You're doing good at raising them, read the stickies if you want to know what combination to put into them as it depends on the style you wish to have (from glass cannon to wall).
I stole Valiant Flame's avatars and he can't do jack about it

I added the stats to my health before I realized it was useless. That's why it's only up by 25. I figured my ATK and DEF were too low when I could only PVP by invading that's why I'm putting all of my points into them now.

My advice is to stop going up in PvP rank until you fix your ATT/DEF to what you want it to be. Go fight some monsters, gain some loot and some levels. If you blow up in Rank too fast, you will be fish bait. And its a world full of sharks.

I stopped that long ago actually. I only PVP for battle hearts and demi points right now. I try to keep ATK and DEF fairly even as you can tell esp. since they are both way to low at the moment.

            Just my 2 cents...

I think your build is looking good, especially for an all-around player.
Remember: energy used to be considered a useless stat...until all of the new monsters, sieges, summons', etc., came out. Now, energy is seen as a much more useful stat. As the devs evolve gameplay, my belief is that the health stat will become more meaningful, leaving those who've ignored it to have to make up for the short-comings in their character development. For that reason alone, I am also working on a "balanced" character...

Yeah, my overall goal on energy and stamina is 288 that's how much it takes a full 24 hrs to regenerate that way, if I don't manage to log on again in the same day, I haven't really wasted any time. I would work on my health because I see it becoming useful within the next couple of big updates, but for now it just opens you up for a world of hurt esp. with my ATK and DEF so low, so I'm leaving it where it is for the moment.

288 Stamina is a very heavy investment. That's 586 SP when all said and done (You started with 5 STA if I remember correctly). That's 109 levels worth, not including sp from quests and praying.

I just hope you don't just pour your resources into just this stat as you progress, as it will hurt you during the time you are building up to that number. And I'm not just talking about PvP. Overall as you progress through the game, while stamina will help you level a bit faster, it makes everything you do weaker.

My personal goal for stamina is 200. But I'm working that very slowly, and only through prayer.

I have 200 stamina and 200 energy, unless you plan on using refills those numbers are probably more than you'll need. The 175 energy is probably enough, once you're done with azeron I'd up stamina to a nice round number but that's just me.

I'd get your defense/attack upto 200 to hit the tiers on some of the monster fights, I'd probably do attack first since it would probably be a good idea to get as many skill points as possible out of doing quests before you go spending energy on monsters.

For blessings, it depends on if you want equipment, Aurora has 3 really good items depending on what you have, but since you already have points in health, I doubt you want to get any more of it. I'd probably pick corvintheus once you're done with azeron since, those demipoints seem to be the hardest to get, and you're going to want the defense bonus anyhow.

Well, the 288 is the very distant future. My plan is roughly once my atk and def are around 200-250 to use the points from leveling to go up 1 each in everything but health and continue adding the extras from questing and the tiers to atk and def so I don't fall behind again.
As for the demi, I am in need of good equipment as most of my cash to this point has gone to properties, but I think the def bonus would do me more good since I'm pulling in about 60,000,000 now and can afford to by most items, although the obsidian are still a pain to afford.

If you like to fight monsters, forget about the obsidian gear. Just buy what you need to do the Underworld Quests.

By the time you save X billions just to buy 5 of any of them, you would have gained better or equal to any of those Obsidian items from simply fighting Genesis or Skarr. Even DTC and Raids will give you equal or better.
